Cardemom Cookies

A cookie I really love is my Cardamom Cookies. I make them all year round and they are just simple and tasty and familiar. On our India trip (in October) we found a package of about 10 double cardamom with some kind of cream in the middle for about 5 rs – an insanly low price for extremly tasty cookies. The rest of the trip I looked everywhere for the cookies, but couldn’t find any… If I had, I’d have imported lots of them =)
Anyways, back to my cookies…
I keep my cookies in my favorite cookie jar – that my mom made for me and gave me for Christmas 2005. I love it and putting it up on my counter really makes it Christmas for me…
Cardamom Cookies
(makes 60 cookies)
2 tbsp Cardamom (powder)
200 g / 7 oz unsalted butter
1 ½ dl / 3/4 cup sugar 
½ dl / slightly less than 1/4 cup syrup
5 dl / 2 cup all-purpose flour
1 tsp bicarbonate
Cut the room temperature butter into cubes. In a food processor, place the sugar, syrup and Cardamom. Start mixing and add the butter cubes one at a time. Add all the butter and let the processer mix till combined, but be careful not to melt the butter too much. Mix the flour and the bicarbonate together and sift. Add the flour mixture into the processor a couple of tbsp at a time. Add all of the flour and mix till all is combined. The dough should be somewhat crumbley… 
Lay out cling film on the countertop and emove the dough from the processor and place on the film. Roll out into a log, about 4 cm / 1 ½ in in diameter. Wrap in plastic and rest in the fridge for 1 hour. Preheat the oven to 175 C / 350 F. Take the roll and slice it about ½ cm / ~1/3 in and place on a baking sheet and bake in the middle of the oven 7-8 min. 
Remove from the oven and cool on the tin, if you put on a cooling rack they will break and crumble. These cookies are very tender and tend to break if one is uncareful. But they taste beautiful so they are well worth it.
