We had a lovely anniversary dinner on Saturday – an easy but extremely tasty four course dinner. There is nothing more lovely than cooking together, just spending time together making something celebratory for us. Something that we both love and do together, something that makes our life together.
We started with a real 80-s Swedish classic, something that almost is frowned upon in todays cooking world – but I love the simplicity and the combination of the sweet soft avocado, salty creme fraiche and mayo mix, salty caviar and the sweet and fishy shrimps. Yum!
The main course was a lovely piece of pepper-encrusted fillet of beef, served with a potato gratin, sautéed carrots and asparagus and a most beautiful fall Chantalle sauce. The meat served medium rare and lots of great flavors.
We had a lovely bottle of red together with our food, a Tommasi. This bottle was given to us by our really lovely neighbors, as a thank you for helping them with removing some snow from their drive way. A lovely bottle of tasty wine.
Andy had bought me lovely roses, such a sweetheart!
For dessert we had made this lovely chocolate mousse – it’s so delicious. Yum!
And then we had some Cambozola cheese with crackers and chili marmalade.
