Ragu & Merguez

I love the simplicity and the ease of ragu… Just fill a pot with vegetables-on-hand and then cover with diced tomatoe cans and water and let simmer till the vegetables have a slight bite but combine to a stew. Serve with pasta and some kind of protein if you would like.

Today I served mine with a lovely Merguez sausage with lovely spicy Maroccan flavors and some parmesan. But that was just cause I had some in the freezer and easy to defrost, it could have just as well been leftover chicken, some thinly sliced piece of meat or a lovely fish filet.

An easy and so comforting food for fall and just great to make lots of and freeze.
